LOVACADO™ CARPACCIO
Serves 4
Ingredients
4 Lovacado™ avocados, halved, pitted and peeled cut into thin slices
1/4 of small rockmelon, deseeded
2 grapefruits segmented, justice reserved
1 lemon zested
2 tablespoons chopped pistachios
1/2 cup mint leaves, torn if big
2 tablespoons extra virgin olive oil
sea salt and freshly ground black pepper
Instructions
- Arrange the avocado slices slightly over lapping on a large flat plate.
- Using a peeler, peel long ribbons of melon over the avocado. Let them fall over the avocado. Scatter over the grapefruit, lemon zest, pistachios and mint.
- In a small bowl whisk together the reserved grapefruit juice and olive oil.
- Drizzle over the salad and season to taste.
- Maybe served with a torn baguette.
